1pintof grape tomatoeshalved or 2 medium tomatoes cut into large bite sized pieces
1green pepper cut into thin strips
1cucumberpeeled and sliced or 1/2 of a large English cucumber sliced thin
1small red onionsliced thin (about 1/2 cup)
2Tablespoonsof freshly shredded Parmesan cheese
1/4cupItalian dressingenough to thoroughly coat salad
Salt and Pepper to taste
2avocados peeled and cut into cubes
Instructions
Mix tomatoes, peppers, cucumbers and onions in a large bowl. Stir in Italian dressing and Parmesan cheese. Season with salt and pepper to taste. Use right away or refrigerate until ready to serve. Stir in the cubed avocados right before serving.
Notes
This is a great starting point- change it to what you like.....extra cucumbers, cubed cheese, etc. I have also only used 1 avocado and it still tastes great.
